For our new weekly feature, "Moveable Feast," Rachel Hutton of Minnesota Monthly joins John Birge to talk about where to go and what to eat in destinations Classical MPR listeners may be interested in visiting.

Inspired by the opening of duck-hunting season in Minnesota, Rachel and John talk about where to find good duck around the state.

On the menu

Rachel recommends those restaurants that frequently change their menus, such as Tilia in Minneapolis or Heartland Restaurant in St. Paul. What's in season often shapes what's on the bill of fare.

On the farm

Many local restaurants source their duck from Wild Acres in Pequot Lakes, Minn. The game farm, run by Pat Ebnet, hatches its own ducklings and raises them for distribution to eateries.

On the table

To serve duck at home, Rachel suggests visiting Clancey's Meats & Fish in Minneapolis, which sells a duck confit.

And thanks to a class through Minneapolis Community Education, Rachel has even prepared her own duck confit at home. "It's really easy to make," she says. Listen to the audio to hear her describe the simple steps to John.
