Mankato isn't too far from the metro area, but it's often overlooked as a travel destination. I used to only think of it as the place they held Training Camp for the Vikings, or a pit stop on the way to South Dakota.
However, they have a nice sculpture tour, children's museum, petting zoo, plus lots of bike trails and Minneopa State Park, which has its own bison herd.
There are also some great restaurants, a local brewery — and if you're headed there from the Twin Cities, you have excuse to stop at Minnesota's Largest Candy Store just outside Jordan (the name pretty much says it all). And while in Jordan, be sure to pick up the superb sausage at Pekarna Meats, a family shop since 1893.
