Moveable Feast: Slow Food

Fall back this weekend, and spend the hour you gain with slow-cooked meats!

Some of my favorites are braised-meat tacos — I like cabeza which is meat from the cow's head — sounds a little concerning to some people, but is actually quite tender and delicious (the cheek meat, in particular). Or huevos rancheros can be made with braised pork — there's a delicious fancy version for brunch at The Kenwood.

Chef Shack Ranch in Seward has a sharable Big Boy Ranch Plate of smoked meats. Brasa has slow-cooked meats, and a braised beef sandwich that's particularly good.

Or try Meritage's cassoulet, with beans, duck confit, and sausage. There's also the perfect hot pork commercial sandwich with mashed potatoes and gravy at the Pedal Pushers Cafe in Lanesboro, Minn.
