Moveable Feast: Food Trends for 2016

Now that we've looked back on food trends of 2015, it's time to look forward to 2016!

What's out? Fresh-squeezed juice bars and flash-in-the-pan frozen yogurt chains. There just isn't enough of a market outside Los Angeles.

What's in? There are a few changes to the food business model. First is delivery: it's everywhere! The Twin Cities now have Amazon's 1-hour delivery, Prime Now — though in Seattle it delivers alcohol and restaurant dishes in addition to groceries. Will anyone ever leave the house?

Also, big changes on the horizon in terms of living wage working conditions for the restaurant industry.

In food-specific trends, there are a few things to be excited about. One is more focus on vegetables and continuing to make healthy ingredients taste delicious (as we saw with the kale trend a few years back). Two, I think we'll see a deeper dive into authentic international flavors — lesser-seen flavors from Africa, South America, and Asia.

Also, I think we'll see more chef-driven fast casual concepts emerge in the coming year, as well as retailers like Target upgrading from foods like nachos and hot dogs to more gourmet eats.
