Fringe Food Festival? Well, authentic Asian restaurants are a good place for those looking to be more daring and adventurous with their cuisine choices.

At Mandarin Kitchen in Bloomington — which a great Chinese spot — Rachel has tried the jellyfish. It's mild-tasting but has a chewy, gelatinous texture. Jellyfish is often called 'the tofu of the sea' because it takes on the flavor of its seasoning.

Speaking of texture: chicken feet is another dish with a soft, gelatinous texture, but maybe it's best not to go into too much detail about that.

A lot of sushi restaurants serve uni — raw sea urchin — that has a bright orange color and a briny, creamy texture. Or, popular in South America, cuy (guinea pig) — served whole at Chino Latino (provided you order three days in advance).
