Recently, legislation changed to make it easier to get into the distilling business and a few new distilleries are beginning to crop up.
Rachel's favorite of these is Vikre is in Duluth's Canal Park, started by Joel and Emily Vikre. And if you have a cool last name like Vikre that sounds like it should be the Norse god of spirits then you should go into distilling!
It's a beautiful old historic brick warehouse building with the beautiful copper still and a comfortable bar and lounge area. They mix fancy cocktails with their aquavit and gin, which is flavored with juniper, spruce, cedar — subtle, but you can taste the sauna (in a good way). The space is like a Restoration Hardware catalog — industrial chic and the drinks come in beautiful glassware, so be sure to Instagram your visit!
