For our weekly feature, "Moveable Feast," Rachel Hutton of Minnesota Monthly joins John Birge to talk about where to go and what to eat in Minnesota.

This week's Moveable Feast falls a few days after Earth Day, which is why John and Rachel resolve to eat locally and sustainably. That's easier now that local food co-ops are booming; longtime co-ops are expanding, new ones are being built, and sales are rapidly growing.

Sustainable eating isn't just for hippies anymore: even the splashy, trendy Uptown restaurant Coup d'Etat is using compostable takeout containers.

The food blog, Heavy Table, has a directory called the Atlas of Ethical Eating where restaurateurs self-report the things they're doing to be more sustainable: e.g., they buy local, organic ingredients; they're in LEED Certified buildings, and they compost food waste.

Kim Bartman's restaurants (Red Stag, Bryant Lake Bowl) along with Heartland, Trotter's, Common Roots, the Birchwood (which is currently undergoing a remodel) are good examples of local eateries doing what they can to be more Earth-friendly.
